Ratatuj/Ratatouille

Podstawa tego prowansalskiego talerza to swieze ziola i letnie warzywa: baklazany, cukinie, papryka, a sekretem glebokiego smaku jest grillowanie kazdego warzywa z osobna...

Skladniki:

1 duża cukinia
1 bakłażan (przed użyciem kroimy na centymetrowe plastry, posypujemy obficie solą i odstawiamy na 15 minut, następnie płuczemy zimną wodą, aby pozbyć się goryczki)
1 papryka
1 cebula
400 g pomidorów w zalewie
1/2 pęczka natki pietruszki
1/2 pęczka bazylii
1/2 pęczka oregano
2 łyżeczki ziół prowansalskich
2 ząbki czosnku
1/2 kieliszka wina
oliwa z oliwek
świeżo mielony pieprz
sól

Do podania:

Dodaj grillowane warzywa, zwiększ ogień, dodaj wino i poczekaj aż odparuje.
Dodaj pomidory wraz z zalewą.
Gotuj na małym ogniu tak długo, aż warzywa będą miękkie, ale jędrne (około 20 minut).
Dopraw do smaku solą i świeżo mielonym pieprzem.

Przed podaniem posyp serem i świeżymi ziołami.

Smacznego!

For English-speaking cooks:

The essence of this Provencal dish is hidden in fresh herbs and summer vegetables: eggplant, zucchini, bell pepper. The secret of its taste is deep grilling vegetables one by one.

Ingredients:

1 large zucchini
1 eggplant (before use, cut into inch slices, sprinkle generously with salt and leave for 15 minutes, then rinse with cold water to get rid of the bitterness)
1 bell pepper
1 onion
400 g tomatoes in brine
1/2 bunch fresh parsley
1/2 bunch basil
1/2 bunch oregano
2 teaspoons Herbes de Provence
2 cloves of garlic
Half a glass of wine
olive oil
freshly ground pepper
salt

Serve with:

grated cheese (I've used cheddar, but it can be a goat cheese, mozzarella or other)
fresh baguette

Cut zucchini and eggplant into cubes or thin slices, and pepper in a longitudinal slices. Preheat grill pan or oven with a grill function to 200 ° C. Sprinkle with olive oil and grill the vegetables one by one in a pan or in the oven, stirring, until they are browned and crispy (about 8 minutes).

Chop the onion and fry it in olive oil in a large pan. When it starts to soften, add the garlic and chopped herbs. Sauté briefly, stirring quickly.

Add grilled vegetables, increase the heat, add the wine and wait for it to evaporate. Add tomatoes with the marinade. Cook over low heat until the vegetables are tender but firm (about 20 minutes). Season to taste with salt and freshly ground pepper.

Before serving, sprinkle with cheese and fresh herbs.

Enjoy!
